In this baked sweet potato recipe, Ina Garten uses a spice blend custom-made for her at La Boîte á Epice, a spice shop where New York's top chefs shop. You can also mix this seasoning yourself at home, as the detailed ingredients are listed below. Sprinkle the La Boîte blend over the sweet potato wedges, add brown sugar, and bake in the oven. The sugar caramelizes on the surface of the sweet potato, and together with the spices, it creates a crispy crust with a unique sweet-spicy flavor. It's delicious.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Potato

  • 2 medium sweet potatoes, peeled
  • 2 tablespoons of good olive oil
  • 1 tbsp La Boite spice mix (see recipe below)
  • 1 tbsp. l. brown sugar
  • 0.5 tsp coarse salt, plus extra for sprinkling
  • 0.5 tsp ground black pepper

La Buat Spice Mix

  • 1.5 teaspoons of turmeric
  • 2 tsp basil
  • 1 teaspoon Aleppo pepper
  • 2 tsp. mustard seeds
  • 2 tsp black pepper
  • 2 tsp coriander seeds
  • 3 teaspoons of cumin seeds
  • 1 teaspoon of caraway seeds

Cooking the dish according to the recipe:


  1. Preheat oven to 230°C.

    Cut the sweet potato in half lengthwise and cut each half into thirds. Place them on a baking sheet and toss with olive oil. Spread the sweet potato in a single layer. Mix together the spices, brown sugar, salt, and pepper and sprinkle over the sweet potato. Bake for 15 minutes, then toss with a spatula. Bake for another 5-10 minutes, until the sweet potato is golden brown.
  2. Lightly salt and serve hot.

    Seasoning La Buat


    Place turmeric, basil, chili pepper, and mustard seeds in a bowl. Grind the black pepper and coriander seeds with a mortar and pestle or a clean coffee grinder and add them to the other spices.

    Grind the cumin and cumin in the same way as the pepper, add to the other spices and mix everything together.

    Note

    In this recipe, Ina replaced the brown sugar with 1 tablespoon of La Boite's custom-made spice blend.
