One interesting way to prepare sweet potatoes as a side dish is to bake them in the oven with spices and serve them with a fermented avocado ranch dressing. The refreshing flavor of the dressing perfectly complements the sweet and spicy sweet potatoes. Sprinkle the sweet potatoes with slices of avocado and serve immediately with holiday meat or poultry.


Ingredients:

  • 1.5 kg sweet potato
  • 1 teaspoon ground ancho pepper
  • 0.5 tsp ground coriander
  • 1/4 cup sour milk or kefir
  • 1 avocado
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine 1.5 kg of diced sweet potatoes, 3 tablespoons of olive oil, 1 teaspoon of ground ancho pepper and 1/2 teaspoon each of ground coriander and salt on a baking sheet.
  • Step 2
  • Bake in a preheated oven at 450°F (230°C) until the sweet potato is tender, 30 minutes.
  • Step 3
  • Blend in a blender until puree half an avocado, 1/4 cup of sour milk or kefir, 2 tablespoons each of light mayonnaise and chopped dill, 2 green onions, 1 tablespoon each of white wine vinegar and water, 1 minced clove of garlic and 0.5 teaspoon of salt.
  • Step 4
  • Drizzle over baked sweet potatoes avocado dressing and sprinkle with diced avocado.
