Although sweet potatoes are called potatoes, they differ from regular potatoes not only in their slightly sweet flavor but also in their brighter color and cooking method. While potatoes are traditionally prepared salted and spiced, sweet potatoes are traditionally sweetened with brown sugar or maple syrup to further enhance their sweetness. Despite this, both vegetables are similar in texture and are considered an excellent side dish for meat dishes. These qualities make it possible to create a stunning orange-and-white marbled mashed potato, combining two distinct flavors. It's a very interesting and unusual idea for a potato side dish.

Cooking the dish according to the recipe:

  1. Place the potatoes and sweet potatoes in a large saucepan and cover with cold water to a depth of 1 inch (2.5 cm). Add a large pinch of salt, bring to a boil, and simmer until the potatoes are easily pierced with a knife, 35-40 minutes. Drain and let cool slightly. Peel the potatoes and place them in a medium bowl. Peel the sweet potatoes and place them in another bowl.
  2. Divide the butter evenly between two bowls. Add the heavy cream and sour cream to the bowl with the potatoes and mash well with a masher; season with salt and pepper. Add the brown sugar and cayenne pepper to the bowl with the sweet potatoes and mash well; season with salt and pepper.

  3. Spoon the potatoes and sweet potatoes onto a warmed serving platter and swirl them together with a large spoon. The mashed potatoes can be made up to 2 hours in advance: place them in a baking dish and set aside. Reheat, covered, in the oven at 175°C for 15-20 minutes.
