Pan-fried sweet potatoes

Make delicious and healthy fried potatoes using equal parts regular potatoes and sweet potatoes. The vegetables are first boiled and then quickly sautéed in a pan with spices. You can boil them ahead of time, which is convenient if you're planning to fry potatoes for breakfast, for example. The spices used are curry powder, a little ginger, and garlic. The potatoes acquire a delightful oriental spicy flavor that perfectly complements the sweetness of the sweet potatoes.

Place 2 diced potatoes and 2 diced sweet potatoes in a saucepan of cold salted water, bring to a boil, and cook until tender, 5 to 8 minutes. Drain and pat dry. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add the potatoes and sweet potatoes and cook, stirring, until golden brown, 8 minutes. Add 1 teaspoon grated ginger, 1/2 teaspoon grated garlic, 1 teaspoon curry powder, and salt and black pepper to taste; cook for 1 minute. Sprinkle with finely chopped cilantro.
