Ingredients:


Quesadilla
  • 1 cup shredded cooked chicken (about 80g)
  • 12 corn tortillas
  • 100 g cheese, thinly sliced
  • 1 tablespoon chopped pickled jalapeño
  • 50 g butter

Fresh salsa topping
  • 500 g of tomatoes
  • 1/4 small red onion
  • 2-3 tablespoons chopped cilantro
  • Hot sauce, for example green chili sauce (1/2 tsp)
  • 1 avocado, halved and thinly sliced
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place 6 tortillas on a work surface and spread the cheese, jalapeño, and chicken among the tortillas. It's best to leave about an inch or two at the edge of the tortilla to allow the cheese to melt. Top with the remaining tortillas and press gently.

    Melt 1 tablespoon (15 g) butter in a small skillet. Carefully place the quesadilla in the skillet and cook, turning once, until golden brown and finely bubbly on both sides, 4 to 5 minutes total.

  • Repeat with the remaining quesadillas, wiping out the pan between fryings if the oil burns.

    Prepare the toppingWhile the tortillas are frying, slice the tomatoes and grate them on the coarse side of a grater, without grating the skins. Also grate the onion and chop the cilantro. Add hot sauce and salt to taste.

    Cut quesadillas into 4 wedges using a pizza cutter or regular knife and serve with salsa and avocado.
