This dish allows kids to customize the toppings of their choice on the open-faced quesadilla. Younger children can assemble the quesadilla before baking, while older kids can season the ground meat and help with cutting the vegetables for the topping.
The recipes use measuring containers with the following volumes:

Ingredients for the recipe:
Quesadilla
- 350 g lean ground beef
- 2 tbsp. l. olive oil
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp. garlic granules
- 2 tbsp. ketchup
- 1.25 tbsp. cooked brown rice
- 4 whole wheat tortillas, 20cm each.
- 1 tbsp. grated mozzarella
Fillings to choose from
- 1/2 cup grape tomatoes, halved
- 1 red bell pepper, seeded and cut into thin strips
- Chopped romaine lettuce
- 1/2 cup low-fat yogurt
- Lime wedges

Cooking the dish according to the recipe:
- Heat olive oil in a large nonstick skillet over medium-high heat. Add the ground beef, break it up with a spoon, and cook for about 5 minutes, until almost all the liquid has evaporated.
- Stir in the cumin, chili powder, garlic, 1/2 teaspoon salt, and a couple of grinds of black pepper and cook for 3 minutes. Stir in the ketchup and cook, stirring regularly, for about 2 minutes, until the meat is cooked through and browned. Add the rice and 1/4 cup water and cook for about 3 minutes, until the rice is heated through.
- Preheat oven to 200°C.
Spray a rimmed baking sheet with cooking spray. Place on it. whole grain tortillasDivide the minced meat mixture between the tortillas and sprinkle evenly with mozzarella. - Bake for 3-5 minutes, until the cheese is melted and the tortillas begin to brown. Transfer the quesadillas to individual plates and serve with toppings.
