Ingredients for the recipe:


Quesadilla with sausage

  • 4 large (30 cm diameter) tortillas
  • 2 cups shredded smoked cheddar cheese
  • 250 g of peeled and finely chopped chorizo ​​sausage
  • 2 green onions, finely chopped

Salsa

  • 3 small plum tomatoes, finely chopped and pressed through a sieve to remove seeds
  • 1 jalapeño pepper, finely chopped and seeds removed
  • 1 small onion, finely chopped
  • A handful of finely chopped coriander leaves
  • Salt

Cooking the dish according to the recipe:


  1. Heat a nonstick or flat skillet over high heat. Cook the tortilla for 20 seconds, then flip it over. Top one half with shredded cheese, chorizo ​​or andouille pieces, and chopped green onions.

    Cover the filling with the remaining half of the tortilla and cook for another minute, 30 seconds per side, gently pressing the quesadilla down with a spatula.
  2. Cut the quesadilla into 4 pieces and season with salsa.
