Ingredients for the recipe:


  • 2.3 - 2.7 kg round steak (middle)
  • 225 g ham, diced into small cubes
  • 2 small chorizo ​​sausages, sliced ​​into rounds (read)
  • 1 carrot, sliced ​​into circles
  • 1/2 medium green bell pepper, diced
  • 1/2 medium red bell pepper, diced
  • 6 crushed garlic cloves
  • 1/2 tsp ground oregano
  • 1 tsp ground cumin
  • 1 bay leaf
  • 3 tablespoons of bitter orange juice
  • 1 cup dry white Riesling cooking wine
  • 3 teaspoons of salt
  • 1/4 tsp pepper
  • 1/4 cup vegetable oil
  • 225 g tomato sauce

Cooking the dish according to the recipe:


  1. Trim excess fat from the meat. Use a knife to make a slit in the center of the meat. Place the meat in a large saucepan. To prepare the marinade, combine the garlic, oregano, cumin, bay leaf, bitter orange juice, wine, salt, and pepper. Pour 3 tablespoons of the marinade into the slit in the meat.
