  • 6 large eggs and 2 egg whites

  • 2 tbsp chopped fresh cilantro
  • 1 avocado, pitted, scooped out and sliced

  • In a nonstick skillet, cook the sausage over medium heat for 3 minutes, until browned. Add the bell pepper and jalapeño and cook, stirring occasionally, for another 5 minutes. Add the beans and half the green onions and continue cooking, stirring occasionally, until the beans are heated through, about 4 minutes.
  • Step 2
  • In a bowl, whisk together all the eggs, 1/4 cup water, and 1/8 teaspoon each salt and pepper until smooth; add to the skillet with the beans and cook, stirring with a spatula, until the mixture begins to set, about 2 minutes. Add the chips, cheese, half the cilantro, and the remaining green onions; continue cooking, stirring, until the egg mixture is completely set, about 3 minutes more.
