Cooking the dish according to the recipe:
- Preheat oven to 90°C.
- Spray 4 tortillas with cooking spray (or brush with olive oil). Place them greased side down on a large cutting board. Spread with mustard and sprinkle with about 1/2 of the cheese. Top each with a thin layer of ham, onion, some pepper, and the remaining cheese.
- Spread the remaining tortillas evenly with apple butter. Place the buttered tortilla on the ham and cheese tortilla (filling inside) and press firmly to form a quesadilla.
- Heat a large nonstick skillet over medium heat. Place the quesadillas, oil side down, and cook for about 2 minutes, until golden brown and the cheese begins to melt. Spray the tops with cooking spray, flip, and cook for another 2-3 minutes, until the second side is golden brown and the cheese is melted.
- Transfer to a baking sheet and keep in the oven to keep warm. Repeat with the remaining flatbreads.
Cut each quesadilla into 4 slices and arrange among plates. Toss the apples with lemon juice and cinnamon to taste. Serve with apple slices.
