Latin American pork with potatoes and sweet peppers

Cook meat with potatoes, onions, bell peppers, and tomatoes in a slow cooker. Sazon seasoning, popular in many Spanish-speaking countries, will add a unique Latin American flavor to this dish. It typically includes cumin, coriander, onion and garlic powder, oregano, and annatto. For the meat portion of the dish, use bone-in pork loin; the meat will be very juicy and tender, and the gravy won't be too greasy. Combine all ingredients and simmer in the slow cooker.

Ingredients for the recipe:
- 2 tbsp. flour
- 1 tbsp. l. ground cumin
- 2 packets of Sazon seasoning (about 2 tsp)
- 4 natural pork chops on the bone (about 1 kg)
- 1 can (400g) of canned tomatoes, finely diced
- 450 g potatoes, peeled and cut into 2.5 cm thick circles.
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1/4 cup + 2 tablespoons chopped fresh cilantro
- 4 cloves garlic, thinly sliced
- 2 bay leaves
- 1 tbsp white or red wine vinegar

Cooking the dish according to the recipe:
- In a large bowl, combine the flour, cumin, Sazon seasoning, 1 teaspoon salt, and a pinch of ground black pepper. Rub the pork steaks on both sides with the seasoned flour and place them in a 6-quart slow cooker.
- Add the tomatoes, potatoes, onion, bell pepper, 1/4 cup cilantro, garlic, and bay leaf to the bowl with the remaining seasoned flour; stir. Arrange the vegetables on top of the pork. Cover and cook on high for 4 hours.
- Place the pork chops on a platter. Skim off any fat from the cooking liquid and remove the bay leaves. Stir in the vinegar and remaining 2 tablespoons of cilantro, season with salt and pepper. Serve the pork chops with the vegetables and gravy.
