While the meat is grilling, you can prepare a simple yet delicious vegetable appetizer of asparagus and bell peppers. Juicy asparagus spears and bell pepper slices are drizzled with olive oil and grilled for a few minutes, until they absorb the grill flavors and develop crisp marks, yet remain crisp and tender. The bell peppers are then thinly sliced, tossed with a fragrant red wine vinegar, and served on top of the beautifully arranged asparagus spears. Perfect as an appetizer or a side dish for a picnic.

Toss 2 bunches asparagus and 1 red bell pepper, quartered, with olive oil, salt, and black pepper. Grill over medium-high heat, turning, until cooked through and charred, 3 minutes for the asparagus and 6 minutes for the pepper. Thinly slice the pepper and toss with 2 tablespoons olive oil and 1 teaspoon red wine vinegar; arrange on top of the asparagus. Top with finely chopped chives.
