Blanch the asparagus in boiling water first to soften it slightly while still retaining its crispness and juiciness. This appetizer will be a hit with everyone. For dipping, serve a sauce blended with mayonnaise, roasted bell peppers, sherry vinegar, and a pinch of spicy smoked paprika.

Recipe:


Blanch 1 bunch of asparagus (trimmed and trimmed) in salted boiling water for 2 minutes until crisp-tender. Drain and let cool, then pat dry. Wrap each spear with a slice of Serrano ham.

For the sauce: Blend 1/2 cup mayonnaise with 1/4 cup roasted red peppers, 1/2 teaspoon sherry vinegar and 1/4 teaspoon hot smoked paprika.
