Asparagus is a wonderful spring side dish that will brighten any holiday table just by looking at it. To enjoy its flavor and juiciness, asparagus doesn't require much cooking. One of the best ways to prepare it is to quickly grill the spears in the oven until they're crispy and juicy yet crisp. Drizzle the cooked asparagus with red wine vinegar and shave Asiago cheese over the top with a vegetable peeler. This delicious Mediterranean-style side dish is ready in minutes. Serve with meat or as an appetizer.

Snap off the bottom ends of two bunches of thin asparagus; discard. On a rimmed baking sheet, toss the asparagus with 2 tablespoons olive oil and season with salt and pepper. Grill in the oven until lightly charred, 4-6 minutes. Transfer to a platter and drizzle with red wine vinegar and olive oil. Sprinkle with shredded Asiago cheese.
