We increasingly see cane sugar mentioned in our cookbooks. And in American recipes, it's ubiquitous. What's the reason for its popularity?

Brown sugar is made from sugarcane and is not chemically refined. In contrast, white sugar contains beet molasses, which has an unpleasant taste and odor. Phosphoric and formic acids are used to remove these.

Cane sugar contains cane molasses, which is rich not only in B vitamins, but also in various microelements essential for the body, such as iron, phosphorus, calcium, copper, magnesium, etc.
