How to Make Pumpkin Waffles with Orange Syrup

Fluffy pumpkin waffles with sour milk and cinnamon.

Serve these waffles with maple syrup mixed with orange. Add a little spice to the pumpkin batter for a little extra flavor. Cane sugar gives the waffles a special chewiness.


Ingredients:


Waffles

Maple syrup with citrus
  • 1 tbsp. maple syrup
  • 0.25 tsp ground cinnamon
  • A pinch of fine salt
  • A pinch of cayenne pepper
  • 1 tsp grated orange zest
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • For the syrupIn a small saucepan, bring the maple syrup, cinnamon, salt, and cayenne pepper to a boil and stir until the cinnamon dissolves, about 1 minute. Remove from heat and stir in the orange zest. Cover and keep warm.
  • Step 2
  • For wafflesPreheat the waffle iron to medium-high. Preheat the oven to 220°F (100°C). Combine the flour, baking powder, baking soda, chipotle powder, cinnamon, and salt in a medium bowl. Whisk together the buttermilk, pumpkin puree, oil, sugar, egg, and egg white. Pour the pumpkin mixture into the flour mixture and gently fold to combine.
  • Step 3
  • Lightly grease the top and bottom of a waffle iron. Fill each section of the iron approximately three-quarters full with batter. Close the lid and bake the waffles until golden brown, 6-10 minutes. Keep the waffles warm in the oven or wrapped in foil while you prepare the remaining batter.

    Serve the waffles with butter, orange syrup and pumpkin seeds.

    Note

    Finished waffles can be frozen in bags and stored for up to 1 month. Reheat frozen waffles in a toaster or oven at 150°C until heated through and crispy.
