Belgian waffle sandwiches look much more appetizing than regular bread, and their honeycomb texture allows for more room for the delicious maple mustard sauce and melty cheese. Fry Belgian waffles made from a blend of corn and wheat flour, sweeten them with natural maple syrup, then assemble the sandwiches with a mix of Dijon mustard and maple syrup, sharp cheddar, and fried bacon. The combination of savory and sweet in these crispy sandwiches is simply perfect.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 cup white corn flour
  • 1 cup premium flour
  • 2 tsp baking powder
  • 0.5 tsp of soda
  • 2 cups of sour milk or kefir
  • 70 g unsalted butter, melted
  • 1/4 tbsp. + 2 tbsp. l. maple syrup
  • 2 large eggs
  • Cooking spray
  • 2 tbsp Dijon mustard
  • 1 and 1/4 cups grated sharp cheddar
  • 6 slices bacon, fried until crisp
  • Special equipment: waffle iron

Cooking the dish according to the recipe:


  1. Preheat oven to 150°C.
  2. In a medium bowl, combine the cornflour, wheat flour, baking powder, and baking soda. In another medium bowl, combine the buttermilk, butter, 1/4 cup maple syrup, and eggs. Add the wet mixture to the dry mixture and knead until smooth.

  3. Preheat the waffle iron according to the manufacturer's instructions. Spray the work surface with cooking spray. Drop 1/2 cup of batter onto the grates, close the lid, and cook until golden brown or until steam stops escaping the waffle iron, about 4 minutes. Repeat with the remaining batter. This recipe makes 6 waffles.
  4. Meanwhile, in a small bowl, combine Dijon mustard and the remaining 2 tablespoons maple syrup.
  5. Place 3 waffles in a single layer on a large baking sheet and spread with the mustard mixture. Sprinkle the cheese evenly over the top. Place in the oven and bake until the cheese is melted.
  6. Arrange one-third of the bacon slices on the cheese waffles and drizzle with a little more mustard mixture. Top with the remaining three waffles. Cut diagonally and serve warm.
