Sour milk makes these waffles ultra-light. The butter added to the batter creates an incredibly crispy crust, beneath which awaits the soft, creamy waffles. A touch of sugar is also added to the batter, so you can enjoy them with maple syrup or other sweet toppings. These waffles are quick and easy to make and are perfect for breakfast or dessert.

Ingredients:

  • 1 and 3/4 cups premium flour
  • 2 tbsp. granulated sugar
  • 1 and 3/4 teaspoons baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon coarse salt
  • 1 and 3/4 cups of sour milk or kefir, shake well
  • 2 large eggs
  • 2 tsp vanilla extract
  • 110g unsalted butter, melted and cooled slightly
  • Maple syrup, jam, berries or yogurt, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat waffle iron to medium-high heat.
  • Step 2
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a medium bowl, combine the sour milk, eggs, and vanilla extract. Combine the sour milk mixture with the flour and knead into a batter.
  • Step 3
  • Stir in the butter until incorporated. Do not overwork the dough.

    When measuring flour, spoon it into a dry measuring cup and remove any excess. Scooping flour directly from the bag with a measuring cup will compact it, resulting in dry baked goods.
  • Step 4
  • Spray both sides of a preheated waffle iron with cooking spray. Pour enough batter to lightly cover the surface of the waffle iron, approximately 1/3 to 3/4 cup, depending on the size of the iron. Keep in mind that the batter will spread when you close the lid.
  • Step 5
  • Close the waffle iron and cook until the waffles are deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. If your waffle iron has a well-seasoned or non-stick surface, you may not need to spray it with cooking spray between batches..
