How to Make Whole Grain Oatmeal Waffles

This waffle recipe uses yeast dough, so start mixing it the night before and refrigerate overnight. In the morning, add the remaining ingredients and cook in a non-stick electric waffle iron. The waffles are light and crispy on the outside, with a rich flavor from the whole-wheat flour and oats. Serve warm with fruit, syrup, or yogurt.


Ingredients:

  • 7 g active dry yeast
  • 0.5 cup warm water (40-45°C)
  • 2 cups of sour milk or kefir
  • 3 tbsp. l. peanut butter
  • 2 tablespoons of sugar
  • 2 cups whole grain flour
  • 0.5 cups oatmeal
  • Protein of 4 large eggs
  • 1/8 tsp baking soda
  • 1/4 teaspoon fine salt
  • Cooking spray to spray the waffle iron
  • Maple syrup, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Pour water into a large bowl and sprinkle the yeast on top; let stand until foamy, about 5 minutes. Add the sour milk, peanut butter, sugar, and flour and stir until smooth. Cover the bowl with plastic wrap and refrigerate overnight.
  • Step 2
  • Preheat the waffle iron. Stir in the oats, egg whites, baking soda, and salt. Lightly spray the hot waffle iron with cooking spray.
  • Step 3
  • Pour about 1/3 cup of batter into each section and spread it out to the edges with the back of a spoon. Cook until the waffles are crisp and golden, 5-7 minutes. Repeat with the remaining batter. Serve the waffles with maple syrup.
