Maple syrup perfectly brings out the natural sweetness of the baked sweet potato and adds a caramelized note, while the salty bits of fried bacon provide a pleasant contrast and, together with the melting, chewy cheddar, make this appetizer simply incredible!

Ingredients:

  • 4 medium sweet potatoes
  • 4 strips of bacon
  • 3 green onions, chopped (reserve 2 tablespoons for serving)
  • 2 tbsp. maple syrup
  • 110 g smoked cheddar, grated (about 1 and 1/4 cups)
  • Sour cream for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C (400°F). Place the sweet potatoes on a foil-lined baking sheet. Bake until tender when pierced with a knife, about 1 hour. Let cool slightly.
  • Step 2
  • Meanwhile, in a medium skillet over medium heat, cook the bacon until crisp, about 7 minutes. Transfer to a paper towel-lined plate to drain. Set aside 1 tablespoon of the rendered fat. Crumble the bacon.
  • Step 3
  • Cut the sweet potato in half lengthwise. Carefully scoop most of the flesh into a bowl, leaving enough flesh in the skins to maintain the boat shape. Add the bacon, bacon fat, green onions, maple syrup, and 1 cup of cheese to the sweet potato flesh. Stir, season with salt and pepper to taste. Place the flesh in the skins and sprinkle with the remaining cheese.
  • Step 4
  • Return the sweet potato to the oven to warm through and melt the cheese, about 15 minutes. Sprinkle with the remaining green onions and drizzle with sour cream.
