If you have sweet potatoes for breakfast, you're guaranteed a filling and satisfying breakfast, even without bread or cereal. Sweet potatoes are healthier than potatoes, and their sweet flavor pairs beautifully with meat, making them perfect for breakfast. To make them delicious, first microwave the whole potatoes, piercing them several times to prevent them from exploding. Cut them in half, and scoop out the flesh to make bowls. Fill the bowls with the sweet potato pulp and fried ground meat mixture, crack an egg into the center, and bake until the yolks remain runny. Dip the mashed sweet potatoes into the yolks and enjoy this amazing breakfast, suitable even for those on the Whole30 diet.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 medium sweet potatoes
  • 1 tbsp. l. olive oil
  • 2 Italian sausages, sugar-free, removed from casings and crumbled
  • 4 large eggs
  • Salsa verde, for serving

Cooking the dish according to the recipe:


  1. Prick each sweet potato with a fork and microwave until tender, turning halfway through the microwave cycle, about 10 minutes. Set the cooked sweet potatoes aside and keep warm.
  2. Preheat the oven to 200°C. Meanwhile, heat the olive oil in a medium skillet over medium-high heat. Add the sausage meat and cook, stirring occasionally, until just beginning to brown, 5-6 minutes.

  3. Cut the sweet potato in half lengthwise. Scoop the flesh into a large bowl, leaving a 1/4-inch-thick border. Place the potatoes on a baking sheet. Add the sausage, 1/2 teaspoon of salt, and a pinch of ground black pepper to the bowl with the flesh and toss to combine. Divide the potato mixture evenly among the 4 sweet potato halves and make a well in the center large enough to fit an egg. Crack an egg into each well and bake until the whites are set but the yolks are still runny, 15 to 17 minutes. Serve with salsa verde.
