Varnished (or glazed) bacon is an unusual appetizer that you won't be able to stop trying. Strips of bacon are coated in maple syrup, sage, and cayenne pepper and baked in the oven until deliciously glazed. Varnished bacon is packed with a whole range of flavors, including sweet, salty, spicy, savory, and smoky notes. It can be served as an appetizer or used in salads and sandwiches.

Cooking the dish according to the recipe:
- Preheat oven to 190°C. Line a large rimmed baking sheet with two layers of foil and top with a sheet of parchment paper.
- Combine maple syrup, sage, and cayenne pepper in a small bowl. Dip the bacon in the syrup to coat, then arrange the slices on a baking sheet in a single layer.
- Bake the bacon until it begins to brown, about 20 minutes. Flip the bacon and rotate the slices if they are unevenly browned. Continue baking until the bacon is crispy on all sides, another 10–15 minutes. Transfer to clean parchment paper to cool slightly, and serve.
