Walnut Shortbread Cookies with Maple Syrup

These melt-in-your-mouth, crumbly nut cookies, coated in a layer of powdered sugar, will brighten up any celebration. Beyond their texture, they also captivate with the warm, sweet-spicy flavor of walnuts and maple syrup. Natural maple syrup is added to the dough and spread onto the surface of the finished cookies to help the powdered sugar adhere, and maple extract enhances it, ensuring there's no shortage of flavor.


Ingredients:

  • 1 cup walnuts
  • 2.5 cups powdered sugar
  • 1.5 cups premium flour
  • 0.5 tsp baking powder
  • 1/4 teaspoon salt
  • 110 g unsalted butter, room temperature
  • 1 large egg yolk
  • 2 tbsp maple syrup + extra for greasing
  • 1 teaspoon maple extract
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position racks in the upper and lower thirds of the oven and preheat the oven to 350°F (175°C).

    Place the walnuts on a baking sheet and toast in the oven until golden brown, 8-10 minutes. Let cool, then transfer to a food processor and chop until finely ground.
  • Step 2
  • In a medium bowl, combine ground walnuts, 1/2 cup powdered sugar, flour, baking powder, and salt. In a large bowl, beat the butter with a mixer on medium-high speed until smooth, 2-3 minutes.
  • Step 3
  • Beat in the egg yolk, maple syrup, and maple extract until fully incorporated. Reduce mixer speed to medium-low; add the flour mixture and beat until the dough comes together, about 2 minutes.
  • Step 4
  • Line two baking sheets with parchment paper. Form the dough into balls and place them on the prepared baking sheets, spacing them about 2.5 cm apart.

    Bake, rotating the pans halfway through, until golden brown, 18 to 20 minutes.
  • Step 5
  • Remove the cookies from the oven and brush with maple syrup; let cool on the baking sheets for 2 minutes. Place the remaining 2 cups of powdered sugar in a shallow bowl; add the cookies a few at a time and toss to coat.

    Then transfer to wire racks to cool completely.
