Crispy fried chicken with fluffy waffles and maple syrup is a traditional American combination that seems crazy at first, but once you try it, you realize it's delicious. Chicken and waffles are most often served for breakfast or brunch. If you're hosting a large brunch, make a whole baking sheet of chicken and waffles and serve it right on the table. Chicken breasts are rolled in spiced sour cream, then crushed cornflakes—they'll be incredibly crispy!—and baked in the oven with waffles (this recipe uses store-bought frozen waffles). Serve drizzled with lemon-thyme butter, and don't forget the maple syrup.


Ingredients:

  • 4 skinless, boneless chicken breasts (180-200 g each), cut each diagonally into 3 pieces
  • 0.5 cup sour cream
  • 0.5 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • Finely grated zest of 1 lemon
  • 5 cups cornflakes, crushed
  • 2 tablespoons extra-virgin olive oil
  • 2 tbsp chopped fresh thyme
  • 6 tablespoons unsalted butter, room temperature
  • 12 frozen homemade waffles
  • Maple syrup, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position a rack in the upper third of the oven and preheat to 450°F (230°C). Spray a rimmed baking sheet with cooking spray. In a large bowl, toss the chicken pieces with sour cream, garlic powder, cayenne pepper, half the lemon zest, 1/4 teaspoon salt, and a few grinds of freshly ground black pepper to coat completely.
  • Step 2
  • Place the cornflakes in a shallow dish and toss with olive oil, 1 tablespoon of thyme, and a pinch of salt and black pepper. Dredge the chicken in the cornflake mixture, pressing firmly to adhere. Place on the prepared baking sheet and lightly spray with cooking spray. Bake until the chicken is lightly browned on top, about 15 minutes.
  • Step 3
  • Meanwhile, in a medium bowl, combine the butter with the remaining lemon zest and 1 tablespoon of thyme. Season with salt and pepper to taste.
  • Step 4
  • Remove the baking sheet from the oven and push the chicken to one side. Arrange the waffles in two overlapping rows on the other side of the baking sheet. Bake, turning halfway through, until a thermometer inserted into the thickest part of the chicken registers 165°F (74°C) and the waffles are heated through and crispy, 10 to 15 minutes.
  • Step 5
  • Drizzle the lemon butter evenly over the waffles. Serve the chicken and waffles with maple syrup.
