This recipe is inspired by the popular American soul food dish chicken and waffles, where crispy fried chicken is served with fluffy Belgian waffles and drizzled with a sweet and spicy sauce. Instead of chicken, cook shrimp in a Cajun sauce and serve them on savory cornmeal waffles.

Ingredients:


Waffles
  • 1 cup corn flour
  • 1 cup premium flour
  • 0.5 tbsp. grated parmesan
  • 2 tsp baking powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1.5 cups of sour milk or kefir
  • 3 tablespoons of vegetable oil
  • 1 tbsp light brown sugar
  • 2 large eggs
  • Cooking spray
  • Special equipment: waffle iron

Shrimps
  • 450 g large shrimp, peeled, deveined and tailed
  • 2 tbsp. l. olive oil
  • 0.5 cups dry white wine
  • 1 cup cherry or grape tomatoes, halved
  • 4 green onions, thinly sliced
  • 4 tablespoons unsalted butter, cut into pieces
  • 1/4 tbsp. grated parmesan
  • 2 tsp hot sauce + extra for serving
  • Lemon wedges, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Waffles:

    In a large bowl, combine the cornflour, wheat flour, Parmesan, baking powder, 1 teaspoon of salt, cayenne pepper, garlic powder, and a few grinds of black pepper. In a medium bowl, combine the buttermilk, vegetable oil, sugar, and eggs. Pour the wet mixture into the dry mixture and gently knead into a dough (it's okay if a few lumps remain). Let the dough rest for 15 minutes.
  • Step 2
  • Meanwhile, preheat the waffle iron. Preheat the oven to 95°C (205°F). Spray the top and bottom of the waffle iron with cooking spray. Fill the waffle iron about three-quarters full with batter (some of the waffle iron should still be visible). Carefully close the lid and cook according to the manufacturer's instructions until golden brown and crisp. Place the finished waffles in a warm oven to keep them warm.
  • Step 3
  • Shrimps:

    Lightly season the shrimp with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp, spreading them in a single layer, and cook until they begin to turn bright pink on the bottom, 2-3 minutes. Add the wine, scraping up any browned bits, bring to a simmer, and cook, stirring occasionally, until the shrimp are pink, 2-3 minutes (if the pan becomes too dry, add water 1 tablespoon at a time).
  • Step 4
  • Add the tomatoes and green onions and stir with the shrimp until the tomatoes begin to soften, about 1 minute. Add the butter and swirl the pan until a thick sauce forms. Add the Parmesan and hot sauce.
  • Step 5
  • Place 2 waffles per plate and evenly distribute the shrimp and sauce on top. Serve with lemon wedges and hot sauce.
