Nothing symbolizes a good morning on a crisp fall day quite like these spiced pumpkin pie-flavored waffles. Chopped nuts and a drizzle of natural maple syrup make the perfect topping, but they're delicious even on their own.

- 2 large eggs, separate the whites from the yolks
- 1 cup premium flour
- 0.5 cup whole grain flour
- 1.5 tsp baking powder
- 1.5 teaspoons pumpkin pie spice mix
- 1/4 teaspoon of baking soda
- 1/8 tsp salt
- Cooking spray
- Walnuts, chopped

Cooking the dish according to the recipe:
- Preheat the waffle iron.
- In a bowl, combine the milk, pumpkin puree, vegetable oil, maple syrup, and egg yolks. In a separate bowl, combine the flour, baking powder, pumpkin pie spice, baking soda, and salt. Gradually fold the flour mixture into the pumpkin mixture and knead until smooth (do not over-knead or over-beat).
