Nothing symbolizes a good morning on a crisp fall day quite like these spiced pumpkin pie-flavored waffles. Chopped nuts and a drizzle of natural maple syrup make the perfect topping, but they're delicious even on their own.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 and 1/4 cups milk
  • 3/4 cup pumpkin puree
  • 3 tablespoons of vegetable oil
  • 2 tbsp natural maple syrup + extra for drizzling
  • 2 large eggs, separate the whites from the yolks
  • 1 cup premium flour
  • 0.5 cup whole grain flour
  • 1.5 tsp baking powder
  • 1.5 teaspoons pumpkin pie spice mix
  • 1/4 teaspoon of baking soda
  • 1/8 tsp salt
  • Cooking spray
  • Walnuts, chopped

Cooking the dish according to the recipe:


  1. Preheat the waffle iron.
  2. In a bowl, combine the milk, pumpkin puree, vegetable oil, maple syrup, and egg yolks. In a separate bowl, combine the flour, baking powder, pumpkin pie spice, baking soda, and salt. Gradually fold the flour mixture into the pumpkin mixture and knead until smooth (do not over-knead or over-beat).

  3. Place the egg whites in a separate large bowl and beat with a mixer (or vigorously by hand) until stiff peaks form, about 3–4 minutes. Gently fold the beaten whites into the batter with a spatula until fully incorporated.
  4. Lightly spray the waffle iron with cooking spray or oil, then add the batter. Cook according to the waffle iron's instructions. Serve with maple syrup and chopped nuts.
