Delicious and very nutritious sweet potato waffles. Bake the sweet potatoes separately and stir them into the batter, adding cinnamon and brown sugar for flavor. It's best to fry the waffles in a Belgian waffle iron with large holes, which are perfect for adding mini marshmallows and toasting them in the oven until they crisp up beautifully. Drizzle the waffles with maple syrup and serve like healthy and delicious brownies.


Ingredients:

  • 1 sweet potato
  • 0.5 cups premium flour
  • 0.5 tsp baking powder
  • 0.5 tsp of soda
  • 0.5 tsp ground cinnamon
  • 1/4 teaspoon fine salt
  • 3/4 cup sour milk
  • 1/3 cup vegetable oil + extra for greasing the waffle iron
  • 3 tbsp. l. brown sugar
  • 1 large egg + 1 large egg white
  • Maple syrup for serving
  • 0.5 cup mini marshmallows
  • Special equipment: waffle iron (preferably for Belgian waffles)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 350°F (175°C). Prick the sweet potatoes with a fork and roast until tender, about 40 minutes. Let cool, then peel and puree the flesh in a food processor until smooth.
  • Step 2
  • Reduce the oven temperature to 90°C (to keep the finished waffles warm). Preheat the waffle iron to medium-high if it has settings (if it doesn't, that's okay).
  • Step 3
  • In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. In another bowl, whisk together the buttermilk, 1/2 cup sweet potato puree, vegetable oil, egg, and egg white. Pour the liquid mixture into the flour mixture and gently mix until smooth (it's okay if there are a few lumps in the batter).
  • Step 4
  • Lightly grease the top and bottom of a waffle iron with vegetable oil. Fill the iron about three-quarters full with batter (some waffle irons have markings). Close the lid and cook until the waffles are golden brown and slightly crisp, 6-10 minutes. Place the finished waffles on a plate, cover with foil, and keep in the oven while you cook the rest.
  • Step 5
  • Turn on the broiler function on your oven. Drizzle each waffle with a little syrup and sprinkle with 1/4 cup mini marshmallows. Toast in the oven until golden brown, 15 to 30 seconds.

    Note

    The sweet potato puree can be made ahead of time and refrigerated for up to 3 days. The waffles can be frozen in a zip-lock bag for up to 1 month. Before serving, reheat in a toaster oven or a regular oven at 300°F (150°C) until crispy.
