For the waffles, use small pumpkins. If you can't find any, you can use 1.5 cups of canned pumpkin puree.

  • 1 small pumpkin (1 – 1.5 kg)
  • 2 and 1/4 cups premium wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon of salt
  • 2 tsp pumpkin pie spice
  • 1/2 cup light brown sugar
  • 2 large eggs, whites and yolks separated
  • 1/4 cup plain yogurt
  • 1 cup whole milk
  • 4 tbsp (60 g) unsalted butter, melted

Sprinkling
  • 1/4 cup sliced ​​almonds
  • 1/4 cup raw pumpkin seeds
  • 1.5 tbsp maple syrup
  • Coarse salt
  • 1/4 cup dried cherries or cranberries
  • Whipped cream, for serving (optional)
