Banana cake is loved for its amazing flavor, moist texture, and delightful aroma. It's also a great way to use up overripe bananas that have lost their appeal. The darker the bananas, the sweeter the cake will be. You can blend them according to your preference, either until smooth or in chunks that will be noticeable in the cake. Walnuts make a great addition to the bananas in the cake. For a quicker cake, use an electric waffle iron instead of an oven. This gives this popular pastry a new and interesting shape, not to mention the convenience of waffle cakes on the go.


Ingredients:

  • 1 and 1/4 cups premium flour
  • 3/4 cup sugar
  • 0.5 cup chopped walnuts
  • 1 teaspoon baking powder
  • 0.5 tsp of soda
  • 0.5 tsp ground cinnamon
  • 0.5 tsp freshly grated nutmeg
  • 1/4 teaspoon fine salt
  • 1 cup mashed bananas (2-3 small bananas)
  • 0.5 cup vegetable oil + extra for greasing the waffle iron
  • 0.5 cup sour cream
  • 1 tsp vanilla extract
  • 2 large eggs
  • Soft butter and powdered sugar for serving, optional
  • Special equipment: waffle iron (preferably for Belgian waffles)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat a waffle iron to medium-high heat. Preheat the oven to 90°C (to keep the finished waffles warm).
  • Step 2
  • In a large bowl, combine the flour, sugar, walnuts, baking powder, baking soda, cinnamon, nutmeg, and salt. In another bowl, whisk together the bananas, vegetable oil, sour cream, vanilla, and eggs. Pour the liquid mixture into the flour mixture and gently mix until smooth (it's okay if there are a few lumps in the batter).
  • Step 3
  • Lightly grease the top and bottom of a waffle iron with vegetable oil. Fill each section of the iron about three-quarters full with batter (some irons have markings). Close the lid and cook until the waffles are golden brown, 4 to 6 minutes. Place the finished waffles on a plate, cover with foil, and keep in the oven while you cook the rest.
  • Step 4
  • If desired, spread the waffles with butter and sprinkle with powdered sugar.

    Note

    Waffles can be frozen in a zip-lock bag for up to 1 month. Before serving, reheat in a toaster oven or a regular oven at 150°C until crispy.
