This delicious banana bread is super easy to make and perfect for on-the-go. One loaf makes 8-10 servings. This recipe is a unique twist on the famous Bananas Foster dessert, which involves toasting bananas with glaze.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 medium-ripe bananas, mashed (1 2/3 cups)
  • 2 eggs
  • 1 cup granulated sugar
  • 0.5 cup coconut oil, melted
  • 3 tablespoons natural yogurt
  • 1 teaspoon rum essence
  • 1 teaspoon vanilla extract
  • 2 cups premium flour
  • 1 tsp baking powder
  • 1/4 teaspoon salt
  • 55 g butter
  • 0.5 cup brown sugar
  • 1/4 cup spiced rum
  • 1 teaspoon orange zest
  • Vanilla ice cream, for serving

Cooking the dish according to the recipe:


  1. Preheat oven to 350°F (175°C). Coat a 9" x 4" loaf pan with cooking spray.
  2. In a bowl, combine the bananas, eggs, sugar, coconut oil, yogurt, rum, and vanilla extract. In another large bowl, whisk together the flour, baking powder, and salt. Make a well in the center of the dry mixture. Pour the wet mixture into the well and stir until all the flour is incorporated and the batter is smooth.

  3. Pour the batter into the prepared pan and bake for about an hour, until the crust is golden brown and a toothpick inserted into the center comes out clean. Remove the bread from the oven and set it aside while you prepare the glaze.
  4. Melt the butter in a saucepan over medium heat. Add the brown sugar and 0.5 cups of water and stir. Wait until the sugar dissolves, then simmer for another 3-5 minutes over low heat, until the mixture begins to bubble around the edges. Turn off the heat and carefully stir in the rum and orange zest (to avoid catching fire).
  5. Slowly pour half the glaze over the banana bread, allowing it to spread evenly. Wait about 30 minutes for the glaze to set, then remove the bread from the pan.

    Slice and serve with vanilla ice cream (if using) and the remaining frosting.
