These waffles are made with banana bread, which can be baked in advance. Simply place a slice of bread in the waffle iron, cook, and—voila!—breakfast is ready. For a relaxed Sunday brunch, Bobby Flay makes Bananas Foster sauce with dark rum for his banana waffles.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
Waffles
- 5 tablespoons unsalted butter
- 1 and 1/4 cups premium flour
- 1 teaspoon of baking soda
- 1/4 teaspoon coarse salt
- 1/8 tsp ground cinnamon
- 3 overripe bananas
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1 large beaten egg
Banana Foster Sauce
- 110 g unsalted butter, cut into pieces
- 3/4 cup light brown sugar
- 1/4 cup dark rum
- 1/4 cup heavy cream
- 2 large ripe bananas, peeled and sliced diagonally into 1cm thick pieces.

Cooking the dish according to the recipe:
- Position a rack in the lower third of the oven and preheat the oven to 350°F (175°C). Spray a 9-inch (22 cm) baking dish with cooking spray.
- Banana bread:
In a small saucepan over medium heat, melt the butter and cook until golden brown. Set aside and let cool slightly. Sift the flour, baking soda, salt, and cinnamon into a small bowl. Mash the bananas in a medium bowl, then combine with the granulated and brown sugars, egg, and cooled brown butter. Add the flour mixture and knead until smooth; do not overmix. - Pour the dough into the prepared pan and bake on the bottom rack of the oven until a toothpick inserted into the center comes out clean, 45–55 minutes. Let cool in the pan for 15 minutes. Then remove from the pan to a wire rack and let cool completely. Once the bread is completely cool, wrap it and let it rest overnight.
- Banana Foster Sauce:
Melt the butter in a skillet over high heat. Add the brown sugar and cook, stirring, until melted. Add the rum and cook, stirring, until the rum has almost completely evaporated. Stir in the cream and cook until heated through. Add the bananas and cook for another minute. Keep the sauce warm while you prepare the waffles. - Waffles:
Preheat a waffle iron according to the manufacturer's instructions. Spray with cooking spray. Slice the banana bread into 2-cm-thick slices, place the slices on the waffle iron (you may only be able to fit 3 slices), close the lid, and cook, pressing down if necessary, until golden brown and slightly crisp, 40 seconds to 1 minute. Repeat with the remaining banana bread slices. Serve drizzled with banana sauce.
