Gravy buns are a popular breakfast in the southern United States. They consist of small scone-like buns topped with a white gravy made from ground sausage, flour, and milk. Remove the raw sausages from their casings and fry them along with the remaining gravy ingredients. Their advantage over regular ground sausage is obvious: the sausage meat is already prepared and has a balanced blend of spices. Instead of traditional buns in the oven, bake the prepared batter in a waffle iron. This saves time, which is essential for breakfast, and the waffle's shape allows the gravy to soak up better, making the dish even more delicious.


Ingredients:

  • 8 servings yeast-free pie dough
  • 250 gr. sausages with sage, remove the shells
  • 2 teaspoons of vegetable oil
  • 2 green onions, white and green parts cut separately
  • 1 small clove of garlic, crushed
  • 1/8 tsp ground allspice
  • 1 tbsp flour
  • 1 cup of milk
  • 0.5 cups lightly salted chicken broth
  • 1 tbsp chopped fresh parsley
  • Special equipment: waffle iron
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat vegetable oil in a large skillet over medium-high heat. Add the sausage meat and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5 minutes.
  • Step 2
  • Add the white parts of the green onions, garlic, allspice, 1/4 teaspoon salt, and 1/4 teaspoon pepper; stir for 30 seconds. Add the flour and stir to toast, about 1 minute. Pour in the milk and chicken broth and simmer, stirring, until thickened, 4 to 5 minutes. Add the green onions and parsley. Cover and keep warm over low heat.
  • Step 3
  • Preheat the waffle iron to medium heat. Place 1 waffle batter piece in each waffle iron section, cover carefully (do not press down), and cook until golden brown and set, 3 to 4 minutes. Cook the remaining waffles in the same manner.
  • Step 4
  • Place 2 waffles on each plate and spoon the meat sauce on top.
