Fry falafel in a waffle iron instead of deep-frying it, and instead of fried balls, you'll have a unique-looking, lower-fat snack. Waffle falafel is just as delicious as fried falafel: it's just as crispy on the outside and soft on the inside. Mix the dough the same way you would for traditional falafel: chickpeas, eggs, flour, and spices. Fry and serve like a Middle Eastern fast food, nesting the waffle falafel in pita pockets along with vegetables and sauces.


Ingredients:

  • 1 can (425 g) canned chickpeas, rinsed
  • 4 Arabian pitas with a pocket, cut in half
  • 1/3 cup vegetable oil, plus extra for greasing the waffle iron
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp. flour
  • 2 tbsp chopped fresh parsley
  • 1 teaspoon baking powder
  • 1 tsp ground cumin
  • 1 teaspoon coarse salt
  • 0.5 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • Protein of 2 large eggs
  • 2 cloves garlic, cut in half
  • Sliced ​​lettuce, tomato, cucumber, onion, pickles, pickled beets and eggs, for filing
  • 1/4 cup hummus, diluted with water
  • Hot sauce for serving
  • Special equipment: waffle iron (preferably for thin waffles)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 90°C (to keep cooked falafels warm).
  • Step 2
  • In a food processor, combine the vegetable oil, flour, cilantro, parsley, baking powder, cumin, salt, coriander, hot pepper, egg whites, garlic, and chickpeas and process until smooth.
  • Step 3
  • Lightly grease the top and bottom of a waffle iron with vegetable oil. Fill the waffle iron about three-quarters full with batter (some waffle irons have markings). Carefully close the lid and cook until the falafel is golden brown and firm in the center, 6-10 minutes.
  • Step 4
  • Place the finished falafels on a plate, cover with foil and keep in the oven while you fry the rest.

  • To make a sandwichFill each pita with falafel. Add any toppings of your choice, drizzle with hummus and a few drops of hot sauce.

    Note

    Falafel can be frozen in a zip-lock bag for up to 1 month. Before serving, reheat in a toaster oven or a conventional oven at 150°C until crispy.
