These miniature mint-crusted donuts are a delight to make in a jiffy with just a few ingredients. Simply mix together a dough of ricotta, self-rising flour, eggs, and sugar, then drop them spoonfully into hot vegetable oil. While frying, the dough balls will puff up into round, fluffy donuts. Immediately roll them in red mint sugar. A perfect treat for the winter holidays!



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 cup self-raising flour
  • 3/4 cup ricotta
  • 2 eggs
  • 1/4 tsp mint extract

Cooking the dish according to the recipe:


  1. Topping and dough:

    In a resealable plastic bag, combine 1/4 cup sugar with 1/2 teaspoon peppermint extract and stir to coat evenly; pour onto a baking sheet and let dry, 1 hour.
  2. In a medium bowl, combine peppermint sugar with 3 tablespoons red sugar. In a separate bowl, combine 2 eggs, 3/4 cup ricotta, 3 tablespoons sugar, and 1/4 teaspoon peppermint extract. Stir in 1 cup self-rising flour.

  3. Frying:

    Heat vegetable oil in a large cauldron to 175°C. Fry 1 heaping tablespoon of batter a few at a time, turning, until golden brown, about 4 minutes. Using a slotted spoon, transfer the balls to a paper towel-lined plate and let them sit for 10 seconds to drain off excess oil.
  4. Then roll the donuts in mint sugar and serve.
