Your kids will be thrilled when they realize what these crab cakes are made of: ice cream and coconut! The sweet coating of bread crumbs and coconut flakes resembles the crispy crust of the cakes, and they're served with tartar sauce, which isn't actually a sauce, but melted white chocolate with chopped pistachios. - 2 tbsp rum
- 2 tbsp. l. grated zest
- 2 tbsp chopped pistachios

Cooking the dish according to the recipe:
- Cut two 4-ounce (110-gram) cartons of vanilla ice cream in half crosswise to make 4 discs; freeze for 30 minutes. Combine 2 cups cubed white bread with 2 cups shredded coconut in a food processor, then transfer to a plate. Remove the carton from the ice cream and press the ice cream into the crumb mixture, coating all sides (set aside any remaining crumbs). Freeze the ice cream until firm, about 1 hour.
- Meanwhile, prepare the "tartar sauce" (below). Dip the ice cream discs in 3 beaten eggs, then roll them, pressing firmly, in the remaining bread crumbs and freeze for at least 1 hour. In a deep frying pan, heat 7 cm of vegetable oil to 175°C (350°F) and fry the ice cream until golden brown, 2-3 minutes.
- Transfer to paper towels to drain excess oil and serve immediately.
April Fools' Tartar Sauce (White Chocolate Pistachio Sauce):
In a bowl, combine 1/4 cup heavy cream, 100g chopped white chocolate, 2 tbsp butter, 2 tbsp rum, the grated zest of half a lime and half an orange, and 2 tbsp chopped pistachios. - Microwave at 50% power for 1 minute. Stir until smooth and let cool.
