Although traditional aioli is a thick paste of garlic and olive oil, over time, the name has come to refer to all mayonnaises with various flavors. However, its two core ingredients remain unchanged. Using a safe pasteurized egg, olive oil, and garlic, make a delicious and easy homemade mayonnaise aioli. It also includes Dijon mustard and a whole jar of crushed giardiniera (an Italian variety of pickled vegetables). This sauce is perfect for any meat or fish dish, burgers, or as a dip for appetizers.

In a food processor, beat 1 pasteurized egg, 2 grated garlic cloves, and 1 teaspoon Dijon mustard. With the processor running, slowly pour in 1/2 cup each of olive oil and vegetable oil. Add the 14-ounce jar of giardiniera, discarding the marinade, and pulse. Scrape down the sides of the processor and pulse again. Season with salt and pepper to taste.
