Ingredients:

  • 1 loaf of crispy bread weighing 450 g.
  • 4 tbsp (57 g) unsalted butter, room temperature
  • 2 tbsp (30 g) mayonnaise
  • 0.5 cup (60 g) grated provolone (hard, low-fat cheese made from cow's milk)
  • 2 tablespoons fresh oregano, finely chopped, plus extra for serving
  • 1 tbsp fresh parsley, finely chopped, plus extra for serving
  • 1 tbsp fresh basil, finely chopped, plus extra for serving
  • 1/4 teaspoon crushed red pepper flakes
  • 2–3 drops of Worcestershire sauce
  • 2 large cloves garlic, finely grated
  • 3/4 teaspoon coarse salt
  • A couple of turns of the black pepper mill
  • 1 tbsp. (140 g) Italian giardiniera, drain the liquid and chop the vegetables finely
  • Grated Parmesan for sprinkling
Substituting ingredients

Preparation:

    Step 1
  • Position a rack in the center of the oven. Preheat the oven to 230°C (430°F). Line a baking sheet with foil. Slice the loaf lengthwise and place it cut-side up on the baking sheet.
  • Step 2
  • In a small bowl, combine the butter, mayonnaise, provolone, oregano, parsley, basil, red pepper flakes, Worcestershire sauce, garlic, salt, and pepper and stir with a small spatula until smooth.
  • Step 3
  • Spread the butter mixture evenly over the sliced ​​bread. Bake until the cheese is golden brown and the edges of the bread are crisp. Check after 12 minutes. Remove from the oven.
  • Step 4
  • Top with marinated vegetables. Sprinkle with Parmesan and fresh herbs. Slice the bread and serve immediately (2 slices per serving).
