By combining mozzarella, tomatoes, garlic, and basil, you create the simplest yet most authentic Italian dish. These ingredients, mingling on a single slice of toasted bread, transport you to summer, to the sunny Mediterranean coast. And even winter, because this delicious Italian bruschetta is made with canned tomatoes in their own juice, meaning the tomato flavor will be rich and sweet no matter the time of year. Toasted baguette slices are rubbed with garlic and served with mozzarella, tomato sauce, and a basil leaf.

Ingredients:

  • 1 can (900 g) of canned whole tomatoes in their own juice, drained
  • 1 cup fresh basil leaves, washed and dried
  • 4 tbsp. l. olive oil
  • 6 cloves garlic, peeled
  • 2 large French baguettes, sliced ​​2.5cm thick (about 36 slices)
  • 0.7 kg mozzarella, sliced ​​1 cm thick.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C.
  • Step 2
  • Place the tomatoes, 1 cup of basil leaves, olive oil, and 2 cloves of garlic in a food processor. Process until a smooth, thick paste forms. Season with salt and pepper to taste.
  • Step 3
  • Place baguette slices on a baking sheet. Toast in the oven for 3 minutes or until lightly golden. Working quickly, rub the remaining garlic over the toasted side of each slice, then top with a slice of mozzarella cheese. Return the bread to the oven and gently melt the cheese, about 45 seconds. Remove from the oven and top each slice with 1 tablespoon of the tomato mixture.
