Even with just tomatoes, basil, bread, and garlic, you can make a delicious Italian appetizer, stunningly simple and bursting with vibrant flavors. Slices of white bread are toasted until golden brown and rubbed with a slice of garlic. Serve the bruschetta with a simple salad of finely chopped sweet plum tomatoes with fresh basil, dressed with high-quality olive oil. This appetizer is ready in minutes and is perfect for snacking while the main course cooks, or as an appetizer to pair with wine.

Ingredients:

  • Half a baguette or long crust bread, cut into 12 slices
  • 2 large cloves garlic, peeled
  • Olive oil to drizzle over bruschetta
  • 3 small plum tomatoes, halved and seeded
  • 20 fresh basil leaves
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the oven to high heat (you can also grill the bread if desired). Place the bread slices on a baking sheet. Grill each side, being careful not to burn them! Rub the toasts with chopped garlic and drizzle with olive oil. Slice the tomatoes and place them in a small bowl. Stack the basil leaves and roll them like a cigar. Thinly slice the basil into confetti and sprinkle liberally over the tomatoes. Add a drizzle of olive oil and coarse salt and gently toss the tomatoes with the basil. Arrange the toasts around the bowl of toppings. Place a spoon nearby for scooping up the tomatoes and serve.
