Bruschetta, an Italian appetizer, is a vast array of mini-salads served on toasted slices of bread. These include vegetables, meat, and seafood, all prepared in such a way that the flavor accentuates one or two ingredients. Bruschetta is traditionally served before the main course to whet the appetite. One of the simplest and most delicious serving options is to top toasted baguette slices with tomatoes and basil marinated in garlic oil and balsamic vinegar. The result is a bruschetta with the unique flavor and aroma of an Italian dish.


Ingredients:

  • 1 whole baguette or bread with crust
  • 4 tbsp. l. olive oil
  • 5 cloves garlic, crushed
  • 2 cups red grape tomatoes, halved lengthwise
  • 2 cups yellow grape tomatoes, halved lengthwise
  • 1 tbsp balsamic vinegar
  • 16 whole basil leaves, thinly sliced ​​and more as needed
  • 110 g butter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat olive oil in a small skillet over medium-high heat. Add garlic and cook, stirring, for 1 minute. Remove from heat before the garlic darkens significantly (it may be golden). Pour the oil and garlic into a bowl and let cool slightly.
  • Step 2
  • Add red and yellow tomatoes, balsamic vinegar, and basil. Season with salt and pepper. Toss and taste the salad, adding more basil and salt if needed (but be careful not to overdo it!). Cover the bowl and, if you have time, refrigerate for 1–2 hours.
  • Step 3
  • Slice the baguette diagonally to create a larger surface area. Melt 4 tablespoons (60 g) of butter in a large skillet and toast half of the bread on both sides until golden brown and crisp. Then melt another 4 tablespoons (60 g) of butter and toast the remaining bread in the same manner.
  • Step 4
  • Before serving, toss the tomato salad and spoon generous portions onto slices of bread. Arrange the bruschetta on a large platter and serve as an appetizer.
