When sweet, dessert-like strawberries, mingled with refreshing mint and a rich balsamic bite, meet a crisp slice of baguette smeared with a thick layer of creamy ricotta, you get an exquisite Italian bruschetta that will grace any house party, Sunday brunch, bachelorette party, or other celebration. Incredibly easy to prepare, it always looks impressive and is a huge hit with guests. Assemble the bruschetta just before serving to enjoy the crispness of the toast contrasting with the rich topping. Katie Lee also recommends sprinkling the sandwiches with flaky sea salt to enhance the strawberry flavor even more.


Ingredients:

  • 1 cup strawberries, finely diced
  • 1 tbsp chopped fresh mint
  • 2 tsp extra-virgin olive oil
  • Sea salt flakes
  • 12 toasted baguette slices
  • 1 cup ricotta
  • Balsamic vinegar (thick and aged), for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • In a small bowl, toss strawberries with mint, olive oil, and a pinch of sea salt. Spread ricotta on each baguette slice. Top with a spoonful of strawberries, drizzle with balsamic vinegar, and sprinkle with additional flaky sea salt.
