Bruschetta with ricotta and strawberries

- 1 cup strawberries, finely diced
- 1 tbsp chopped fresh mint
- 2 tsp extra-virgin olive oil
- Sea salt flakes
- 12 toasted baguette slices
- 1 cup ricotta
- Balsamic vinegar (thick and aged), for serving
