Time: 15 min.
Compote is a dessert made from pieces of fruit simmered in a spiced syrup, which has been prepared in Europe since the Middle Ages. Compote is traditionally served with whipped cream at the end of a meal, or added to porridge or cottage cheese, used as a sweet fruit sauce, or as a filling for baked goods. Make a compote of pears in white wine and season with vanilla, anise, and thyme. Use this wonderfully flavorful dessert to fulfill your culinary fantasies or simply treat your loved ones.

Combine 1/2 cup dry white wine, half a vanilla pod split lengthwise, 1 star anise, and a pinch each of salt and pepper, and bring to a boil. Cook until the wine has reduced by half, 4 minutes. Add 2 tablespoons sugar, 2 chopped, peeled pears, and 3 tablespoons water; cook for another 8 minutes. Add 1/4 teaspoon chopped thyme, increase the heat, and cook until syrupy, 1–4 minutes. Cool.
