Waffles have a rich, centuries-long history. The exact version and date of the original recipe are unknown, but some sources claim that the ancient Greeks and Romans enjoyed this delicacy. The name, still used today, indicates its German origins: "Waffel" translates from German as "cell" or "honeycomb." But this lattice-like pastry became especially popular after the invention of the first waffle iron. On August 24, 1869, American Cornelius Swarthout unveiled his device for baking waffles, already quite popular in America. This sparked a literal waffle boom, and August 24 became an annual Waffle Day in the United States.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Waffles

  • 2 cups premium flour
  • 0.5 cups oatmeal
  • 2 tablespoons of sugar
  • 1.5 tsp baking powder
  • 0.5 tsp of soda
  • 0.5 tsp ground ginger
  • A pinch of salt
  • 1 and 1/4 cups milk
  • 1 tbsp. 2% granular cottage cheese
  • 2 large eggs
  • 0.5 tsp vanilla extract
  • Zest of 0.5 orange, grated
  • 20 g butter, melt and cool slightly

Cottage cheese topping

  • 1 tbsp. 2% granular cottage cheese
  • 2 tablespoons of sugar
  • 1 tbsp. milk
  • 0.5 tsp vanilla extract

Compote

  • 20 g butter
  • 3 Bere Bosc pears, peeled and cut into small pieces
  • 1/3 cup dried cherries
  • Juice of 2 oranges (about 1 cup)
  • 2 tablespoons of sugar

Cooking the dish according to the recipe:


  1. Preparing the curd toppingIn a food processor, combine the cottage cheese, sugar, milk, and vanilla extract and process until smooth. Cover and refrigerate until ready to serve.
  2. Making compoteMelt the butter in a saucepan over medium heat. Add the pears and cook for about 2 minutes, until browned around the edges. Add the dried cherries, orange juice, sugar, and 1/3 cup water. Bring to a simmer and cook until syrupy, about 5 minutes; set aside.

  3. Making wafflesPreheat oven to 120°C. In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, ginger, and salt. In another bowl, whisk together the milk, cottage cheese, eggs, vanilla extract, and orange zest (the mixture will be lumpy), then whisk in the flour mixture until combined. Stir in the melted butter.
  4. Preheat the waffle iron and spray the cooking surface with cooking spray. Pour in a small amount of batter (about 0.5 cups, depending on your waffle iron) and cook until crisp. Transfer the waffles to a baking sheet and heat in the oven; repeat with the remaining batter. Top the waffles with the creamy topping and fruit compote.
