Cherry Vanilla Crisp is a thick, dense, and juicy berry filling covered in a thin layer of crunchy topping. It's perfect as a fruit dessert and also a wonderful accompaniment to a scoop of vanilla ice cream. The bottom berry layer is made up of cherries mixed with sugar, a little flour (for thickness), vanilla extract, and cinnamon. Add a couple of spoons of dark rum, and the cherry flavor becomes even more spicy and unique. The top layer of crisp is a crunchy mixture of flour, sugar, flaked almonds, oats, and butter. To fully enjoy the rich flavors of this dessert, serve it warm.

Ingredients for the recipe:
- 4 tablespoons unsalted butter, melted, plus extra for greasing the pan
- 6 cups pitted cherries (defrost if frozen)
- 3/4 cup sugar
- 2 tbsp dark rum (optional)
- 2 tsp vanilla extract
- 0.5 tsp ground cinnamon
- A pinch of salt
- 1/4 tbsp. + 2 tbsp. l. flour
- 2/3 cup oatmeal
- 1/3 cup sliced almonds

Cooking the dish according to the recipe:
- Preheat oven to 175°C. Grease a 22cm square baking pan with butter.
- In a large bowl, combine the cherries with 1/2 cup sugar, rum, vanilla extract, cinnamon, salt, and 2 tablespoons flour. Transfer to the prepared baking dish.
- In a medium bowl, combine the remaining 1/4 cup flour, oats, almonds, and remaining 1/4 cup sugar. Stir in the melted butter until smooth, then spoon the mixture over the cherries in the pan. Bake until the filling is bubbling and the topping is golden brown, 50 minutes to 1 hour. Let cool slightly and serve.
