Blueberry Crisp with Oatmeal

Summer is the perfect time to switch from heavy, calorie-laden pies to lighter baked goods filled with a wealth of fruits and berries. American blueberry crisps are one such dessert. To make them, fresh blueberries are tossed with sugar and flour and drizzled with lemon juice, which pleasantly balances the sweet blueberry flavor. The berry mixture is then topped with a brown sugar, oatmeal, crushed nuts, flour, and butter filling and baked. The resulting rich blueberry filling is topped with a golden, crunchy streusel with a nutty, caramel flavor. Serve with a scoop of vanilla ice cream and enjoy its contrasting textures.

Ingredients for the recipe:
Filling
- 6 cups blueberries
- 0.5 cup granulated sugar
- 3 tbsp. flour
- 2 tablespoons freshly squeezed lemon juice
- A pinch of coarse salt
- Unsalted butter, to grease the pan
Topping
- 3/4 cup brown sugar
- 3/4 cup premium flour
- 0.5 cups oatmeal
- 0.5 cup chopped almonds or hazelnuts
- 0.5 tsp. grated lemon zest
- 1/4 tsp ground cinnamon
- 0.5 tsp coarse salt
- 6 tablespoons chilled unsalted butter, cut into 1cm pieces

Cooking the dish according to the recipe:
- Preheat the oven to 190°C (375°F) and grease a 2-quart (2-liter) baking dish. Prepare the filling. In a medium bowl, combine the blueberries, granulated sugar, flour, lemon juice, and salt. Transfer to the prepared baking dish.
- In a separate bowl, combine brown sugar, flour, oats, nuts, lemon zest, cinnamon, and salt. Using your fingers or a pastry blender, blend the butter into the flour mixture until coarse crumbs form. Sprinkle over the blueberry mixture.
- Place the pan on a baking sheet and bake until the topping is golden brown and the filling is bubbling, 45-50 minutes. Let cool slightly and serve.
