In America, these types of cookies are also called "kitchen sink cookies" because they contain everything but the kitchen sink. Indeed, chocolate, walnuts, dried cherries, and dried apricots are just a few examples and a small part of what American cooks add to their cookies to maximize their flavor. There are countless variations of these cookies, and experimenting with different types of dried fruits, nuts, and candies is endless. However, this recipe also features a more diet-friendly composition. For example, applesauce replaces some of the butter, reducing the fat content while maintaining a moist and chewy texture. Dried cherries and dried apricots add a natural sweetness.

Ingredients:

  • 2 tbsp (30 g) butter, softened
  • 2 tbsp. l. rapeseed oil
  • 1/3 cup brown sugar
  • 1/4 cup applesauce
  • Protein of 1 egg
  • 1 tsp vanilla extract
  • 2/3 cup whole wheat baking flour
  • 0.5 cups oatmeal
  • 1/4 teaspoon salt
  • 1/4 tsp ground cinnamon
  • 1/4 cup chopped dried cherries
  • 1/4 cup chopped dried apricots
  • 1/4 cup lightly toasted walnuts
  • 60 g dark chocolate, chopped into pieces
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C.
  • Step 2
  • In the bowl of a stand mixer, combine the butter, vegetable oil, and brown sugar. Beat on high speed, stopping occasionally to scrape down the sides of the bowl, until light and fluffy, about 2 minutes. Add the applesauce, egg white, and vanilla and mix. Add the flour, oats, salt, and cinnamon and mix until evenly combined. Add the cherries, dried apricots, walnuts, and chocolate and mix.

  • Spray 1 baking sheet with cooking spray. Scoop 1 tablespoon of dough at a time, roll into balls, and place them 2 inches apart on the baking sheet. Press the balls with the palm of your hand to flatten them slightly, as this will prevent the cookies from spreading too much. Bake for 12-14 minutes, or until lightly browned but still soft. Remove from the oven and cool on a wire rack.
