Apples and pears come together in this savory, aromatic fall dessert. The tender fruit, baked under a crispy oatmeal and brown sugar crust, is perfect for both everyday dessert and holiday treats, especially when topped with a scoop of vanilla ice cream for a warm, crisp finish. It's best to use firm varieties of pears and apples to ensure the slices retain their shape after baking, resulting in a delicious dessert.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Crisp

  • 900 gr. ripe Bere-Bosc pears (4 pcs.)
  • 900 g of firm red apples (6 pcs.)
  • 1 tsp. grated orange zest
  • 1 tsp. grated lemon zest
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 0.5 cup granulated sugar
  • 1/4 cup premium flour
  • 1 teaspoon ground cinnamon
  • 0.5 tsp ground nutmeg

Topping

  • 1.5 cups premium flour
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 0.5 tsp coarse salt
  • 1 cup oatmeal
  • 220 g chilled unsalted butter, diced

Cooking the dish according to the recipe:


  1. Preheat oven to 175°C.
  2. Peel and core the pears and apples and cut into large chunks. Place the fruit in a large bowl and add the zest, citrus juice, sugar, flour, cinnamon, and nutmeg. Place everything in a 22 x 30 x 5 cm oval baking dish.

  3. Topping:

    In the bowl of a stand mixer fitted with a paddle attachment, combine the flour, sugar, salt, oats, and butter. Mix on low speed for 1 minute, until the mixture forms coarse crumbs. Sprinkle the topping evenly over the fruit, completely coating them.
  4. Place the crisp pan on a baking sheet and bake for 50 minutes to 1 hour, until the top is crisp and the fruit is bubbly.
  5. Serve the crisp warm.
