Pear Bellini with Champagne

You'll need just two ingredients to make these delicious sparkling cocktails. Canned pears are a great substitute for the peach puree used in a traditional Bellini. Simply blend them and add the puree to a glass of sparkling wine.

- 1 bottle sparkling rose wine or champagne, chilled

- Drain the pears into a separate container. Add the pears to a blender along with 2 tablespoons of the liquid from the jar. Blend until smooth. Step 2
- Divide the pear puree among 6 champagne flutes. Top up with sparkling wine and stir gently. Serve immediately.
