What's the secret to this elegant cocktail from Geoffrey Zakarian? He rubs a strip of lemon zest along the rim of the glass. This technique enhances the citrus flavor of this champagne-based drink with orange liqueur and Angostura. He also drops the strip of zest into the glass, by the way.

Ingredients:

  • 1 cube of sugar
  • 4 drops Angostura bitters
  • 1 wide strip of lemon zest
  • 1 teaspoon orange liqueur, such as Grand Marnier
  • 180 ml chilled champagne
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • Place a sugar cube in a chilled coupe glass. Pour bitters over the cube.
  • Step 2
  • Rub the rim of the glass with lemon zest and drop the zest into the glass. Pour orange liqueur into the glass, then top it off with champagne. Serve immediately.
