Bellini is one of the most popular summer cocktails in Italy, made with peach puree and sparkling wine. You can enjoy the refined flavor of this drink even if peach season isn't over yet, and make it with frozen fruit. It's even better this way, as your cocktail will be very chilled right away. Whisk peach chunks with simple syrup and lemon zest, which adds a pleasant tartness, and complement the peach puree with any sparkling wine you like. Bellinis are traditionally served in tall champagne flutes, and you can adjust the proportions of fruit and alcohol to suit your taste. However, the ideal ratio is 1/3 peaches to 2/3 wine.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 450g package of frozen peaches or nectarines
  • 1 cup of sugar
  • Zest of 1 lemon
  • Champagne or sparkling wine, to serve

Cooking the dish according to the recipe:


  1. Make simple syrupMix sugar and 0.5 cups of water in a small saucepan and heat over low heat until all the sugar has dissolved. Pour the mixture into a container and chill the syrup in the refrigerator.
  2. Place all the frozen peaches from the bag in a blender, add the lemon zest and cooled sugar syrup; blend until smooth. Refrigerate until ready to serve.

  3. To serve, pour the peach puree into champagne flutes and top it off with very cold champagne or sparkling wine.
